Erika Cervantes was born in Michoacán, Mexico and raised in the Central Valley in California. She comes from a family of migrant farm workers and carries these experiences in her community organizing and advocacy work. As a child of immigrants and an immigrant herself, Erika believes that everyone has a right to access the resources that they need to thrive; whether that’s financial and housing stability, healthy environments, or access to fresh foods. Through her own lived experience, she’s learned to have an intentional and acute focus on working with the most vulnerable communities that are disproportionately impacted by systems of oppression. Erika is passionate about developing community leaders to strategize sustainable and transformative change in our communities and has over 10 years of experience in her field. She joined Hunger Free Colorado in 2022 as a Community Organizer and became the Director of Organizing and Community Partnerships in 2024. She’s a founding board member of Coloradans for Food Justice, Food Justice Northwest Aurora and serves on several boards including Colorado Immigrant Rights Coalition, CIRC Action Fund and Colorado People’s Alliance.
